- Pour the buttermilk into a shallow dish and add the chicken cutlets, letting them soak for at least 15 minutes.
- In a separate shallow dish, mix 1 cup flour with the paprika, garlic powder, 3/4 tsp salt and 1/4 tsp pepper.
- Lift each cutlet from the buttermilk, letting excess drip off, and dredge in the seasoned flour, pressing to coat well. Set aside on a plate.
- Heat about 1/2 inch of oil in a large skillet over medium-high heat until shimmering.
- Fry the cutlets for 3-4 minutes per side, until deep golden and cooked through (165°F/74°C internal). Drain on a wire rack or paper towels and keep warm.
- Pour off all but 3 tbsp of oil from the skillet. Whisk in the remaining 2 tbsp flour and cook for 1 minute, stirring constantly.
- Slowly whisk in the milk, scraping up the browned bits from the bottom of the pan, and cook until thickened, 4-5 minutes. Season with the remaining salt and plenty of black pepper.
- Serve the fried chicken with the gravy spooned generously over the top.
