Slow Cooker Chicken Curry

By Armin · Published · Updated

A slow cooker gives curry spices hours to bloom and deepen, turning simple pantry ingredients into a rich, warmly spiced sauce with almost no attention required. Stir in coconut milk toward the end for a glossy, restaurant-style finish.

Instructions

  1. Add the chicken, onion, garlic, ginger, curry powder, cumin, turmeric, cayenne, diced tomatoes, chicken broth and salt to the slow cooker. Stir to combine.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is very tender.
  3. Stir in the coconut milk during the last 20-30 minutes of cooking to warm through without curdling.
  4. Taste and adjust salt, then garnish with cilantro and serve over rice.

How to tell it's done

After 6-7 hours on low, the thigh chunks should be very tender and break apart easily with a spoon, far above 165°F (74°C). The sauce will be thin at first. Once the coconut milk goes in, it should become creamy and coat the chicken. If it's watery, leave the lid off on high for the last 30 minutes.

Tips for success

  • Adding the coconut milk toward the end, rather than at the start, keeps the sauce from separating over the long cook time.
  • If you like a thicker curry, remove the lid for the last 30 minutes on high to let some liquid reduce.
  • This curry freezes well; add the coconut milk fresh when reheating for the best texture if possible.
  • Adjust the cayenne to taste — this base recipe is mild-to-medium.

Ingredient notes & swaps

  • Spices: slow cookers don't let you bloom spices in oil. For deeper flavor, cook the onion, garlic, ginger and spices in a skillet with 1 tbsp oil for 3-4 minutes before adding them to the pot.
  • Thighs only: chicken breast tends to turn dry and stringy over 6-7 hours. If you must use breast, cook on low for 3-4 hours only.
  • Coconut milk: full-fat gives the creamiest sauce. Light coconut milk works but makes a thinner curry.
  • Vegetables: cubed potatoes or sweet potatoes can go in at the start. Add spinach or frozen peas with the coconut milk at the end.

Storage & reheating

Refrigerate for up to 4 days. Reheat gently on the stove or in the microwave, stirring often, and add a splash of water or broth if it has thickened. Bring leftovers to a full simmer, or 165°F, before serving.

Make ahead & freezing

Assemble everything except the coconut milk in the slow cooker insert the night before and refrigerate it. In the morning, put the insert in the base and turn it on. It may need an extra 30 minutes. The finished curry freezes for up to 3 months.

What to serve with it

Serve with basmati rice and warm naan, and add a cucumber raita, mango chutney or quick-pickled red onions on the side.

Frequently asked questions

Why should I add coconut milk at the end?

Coconut milk can separate or curdle slightly over many hours of slow cooking; stirring it in near the end keeps the sauce smooth and rich.

Can I use chicken breast instead of thighs?

Yes, though thighs hold up better to long slow cooking; if using breast, reduce the cook time slightly and check for dryness.

Can I add vegetables to this curry?

Diced potatoes, carrots or cauliflower can be added at the start along with the chicken.

What should I serve with slow cooker chicken curry?

Basmati rice, naan, or a side of roasted vegetables all pair well.
